Be inspired during Spring

What better time to be inspired to eat fresh healthy produce than during spring.
Farmers markets are gaining popularity and you are sure to find one near you.
Check out www.farmersmarkets.org.au and head on down to one this weekend. Look out for some gorgeous seasonal broad beans and thyme and why not try this recipe sometime during the week.


Pasta with broad beans, bacon and thyme
Serves 4

  • 300g fresh pasta
  • 400g broad beans in the pod
  • 1 red onion, finely chopped
  • 2-3 cloves garlic, finely chopped
  • 10-12 sprigs thyme
  • 200g rashers smoked bacon, cut into strips
  • 2 Tbsp extra virgin olive oil
  • Fresh ground black pepper
  • Parmesan cheese, to serve

Cook pasta according to packet instructions. Drain and return to saucepan.
Shell the broad beans and drop into lightly salted boiling water for 2 minutes. Drain and then double-peel the broad beans by slipping them out of their tough skin.
Heat oil in a fry pan, add onion and garlic and soften. Add bacon, thyme leaves and pepper to taste. Add bacon mix and broad beans to pasta and mix well.
Serve with a small amount of parmesan. Enjoy!
